SUPRASEL OneGrain® mineral salt products share the same functionality with the ordinary food grade salt. They are made using a unique technology. As a result, OneGrain contains an optimal balance of mineral salts and flavours. You can substitute ordinary salt completely for any of the mineral salt products while retaining the unique taste of your product unchanged.

SUPRASEL OneGrain® mineral salt products contain an optimal balance of sodium chloride, potassium chloride and flavours. The flavours bring back the savoury taste to the salt eliminating the adverse aftertaste of potassium. Since all ingredients are homogeneously combined in one single grain, SUPRASEL OneGrain® mineral salt is an efficient and appropriate substitute for ordinary salt (1:1).

SUPRASEL ONEGRAIN® TS-M100 reduced sodium salt for meat products

Suprasel OneGrain TS-M100 fine salt with reduced sodium content is used in special-purpose meat products recommended for children’s nutrition and for people with health issues wishing to limit their sodium intake in their diet (high blood pressure, cardiovascular diseases, obesity and other issues).

The salt is fine with uniform grains (0.25-0.71 mm), very pure and produced using a unique technology. Sodium reduction: up to 40%.

The product is free from GMOs, allergens (including gluten) as well as residues pathogens and insecticides.

We recommend storing the product in original packaging in a clean and dry room with humidity not exceeding 60%.

Shelf life: 1.5 years.

SUPRASEL OneGrain® TS-M100 reduced sodium salt for meat products

Potassium is a useful element, but it has an unpleasant taste and smell. Salt production experts at Hengelo SALT SPECIALTIES have developed, thanks to a variety of tests, a product with reduced sodium content – SUPRASEL OneGrain TS-M100 salt. It is not a mere salt mix, but a special-purpose food additive containing potassium that does not have a foreign unpleasant taste and smell thanks to the substances being homogeneously combined in a single grain (OneGrain) and a unique natural flavour used. Obtaining the desired taste and consistency of a meat product will require a few trial and error exercises to determine the most appropriate ratio of this salt additive with reduced sodium content for a variety of products.

For the production of meat products, it is recommended to mix SUPRASEL OneGrain TS-M100 reduced sodium salt with SUPRASEL nitrite salt 1.2% (Special) containing 1.2% sodium nitrite in a 1:1 ratio, according to the salt content specified in the product recipe. This ratio may be slightly adjusted by trial and error and depending on the desired outcome.

For marinating meat, SUPRASEL OneGrain TS-M100 salt is mixed with SUPRASEL fine salt in a 1:1 ratio or only SUPRASEL OneGrain TS-M100 salt is used.

It should be taken into account that the use of this mineral additive, where a proportion of NaCl is substituted for KCl, and the nitrite salt with standard ingredients is associated with a risk of the produced meat product ending up paler in colour. Therefore, it is recommended to use SUPRASEL 1.2% nitrite saltwhich contains twice as much sodium nitrite, as opposed to the commonly used Suprasel nitrite salt 0.6%.

Salt production experts at Hengelo SALT SPECIALTIES have conducted experiments using SUPRASEL OneGrain TS-M100 reduced sodium salt in the production of sausages and heat-treated culinary meat products and have not detected any organoleptic or technological deviations in the products.

SUPRASEL OneGrain B50 reduced sodium iodised salt for bread products and confectionery

Salt is one of the essential ingredients in bread products and one of the sources to significantly increase sodium content in these products. Americans estimate that their population consume around 30% of total sodium intake per day on average with bread products. The situation is similar in our country too. White bread has an average salt content of 2.0-2.1% of the flour content. And this is the optimal level for the flavour to develop.

By substituting the usual fine food grade salt for SUPRASEL OneGrain B50 fine iodised salt, you can reduce sodium content in bread products twice without compromising demand and acceptability of the products to consumer tastes.

SUPRASEL OneGrain B50 salt application recommendations:

  • replace the salt in the recipe with SUPRASEL OneGrain B50 fine iodised salt;
  • use 5-10% less yeast and, where possible, reduce sugar content;

SUPRASEL OneGrain B50 salt may be added directly instead of fine salt with minor adjustments to yeast or sugar content.
